Our Story

Third Wave Cafe & Wine Bar was created from a vision of globally inspired cuisine served in an inviting and relaxed coastal setting. Located in the heart of New Smyrna Beach, our restaurant brings together fresh ingredients, bold flavors, and a passion for hospitality to create a dining experience that feels both vibrant and welcoming.

Traveling through the coastal towns of the Mediterranean reveals a rich variety of flavors, ingredients, and culinary traditions. Many of these influences made their way to the New World, blending with local cultures and evolving into the unique regional cuisines we know today.

Florida's coastal region, with its own southern traditions, abundant seafood, and access to regional farms, is perfectly positioned to benefit from this convergence of global flavors. Third Wave Café & Wine Bar embraces this inspiration, creating a menu shaped by coastal influences, rustic traditions, and fresh, thoughtfully sourced ingredients—all served in a warm and inspiring setting.

Our goal is to provide every guest with a unique and memorable dining experience. Small and medium plates encourage sharing in a tapas-style format, while full entrées offer a flavorful journey through carefully prepared meat and seafood dishes. Whenever possible, our menu is sourced locally and guided by sustainable and responsible practices.

We proudly partner with local producers and organizations such as Smart Catch and Seafood Watch as part of our commitment to thoughtful sourcing and environmental impact.

Diners can relax in the casual, Brooklyn-inspired café, where chalkboard walls showcase our extensive coffee and tea selections. Guests can browse artwork and vintage National Geographic magazines while settling into the 1940s-era sofa, the live-edge bar, or one of our unique tables. Under the warm glow of Edison-style lights, the space offers an intimate and relaxed atmosphere to enjoy food and drinks.

Those wishing to dine outdoors can continue past the café along a verdant path that leads to our garden patio. Passing through the garden gates reveals a truly enchanting setting, with lights strung overhead and winding through towering trees, while romantic chandeliers softly illuminate the garden arbors.

At the heart of the patio stands a serpentine cypress bar crafted by Wayne, one of the restaurant's owners. The garden's centerpiece is a striking octopus fire feature perched above a fountain flowing from a clear pool—an original, locally crafted work of art designed by another owner, Kathy.

With a menu as thoughtfully crafted as ours, the wine list must be just as carefully curated. The same passion and global influences found in our cuisine and atmosphere are reflected in our wine cellar, offering selections that pair beautifully with our dishes or stand perfectly on their own for a relaxing glass with friends. From approachable everyday wines to special-occasion bottles like Caymus and Insignia, our list is extensive, varied, and always evolving—ensuring there is always something new and unexpected to discover.

For guests seeking something beyond wine, our cocktail program is equally impressive. Developed by a top-ranked mixologist, the menu draws inspiration from classic speakeasy traditions, featuring timeless cocktails crafted with quality ingredients and thoughtful technique.

James Beard Foundation

Our vision at Third Wave is to provide the best quality food we can offer. We source much of our produce from local farms, and we now have become active members in the James Beard Foundation and Smart Catch Program.

Developed by Microsoft co-founder and philanthropist Paul G. Allen, this program provides training and support to chefs so they can serve seafood fished or farmed in environmentally responsible ways.

"Smart Catch works to increase the amount of sustainable seafood sold throuh U.S. restaurants by addressing the many barriers to getting sustainable seafood on a diner's plate from reliable sources to chef training and comsumer awareness. The program also seeks to engage the chef community in effort to improve seafood both domestically and abroad".

Monterey Bay Aquarium Seafood Watch

Through Chef David Moscoso, we are active members of the Seafood Watch Program. The Monterey Bay Aquarium Seafood Watch program helps consumers and businesses choose seafood that's fished or farmed in ways that support a healthy ocean, now and for future generations. Their goal is to help chef's indicate which seafood items are best choices or good alternatives, and which ones you should avoid.
